A relatively new preservative technology for enhancing the shelf-life of consumer food products is Modified Atmosphere Packaging (MAP). It utilizes gases in packaging to maintain quality from the producer to the consumer.

MAP has been developed by large-scale food-processors and wholesalers, and it is, internationally, the fastest growing method for preserving the inherent quality of foodstuffs. Modified atmosphere very likely will become the winning method of the 21st century as a natural way to preserve the original quality of foodstuffs.
